What I Wrote Wednesday

Last week, I sent a little card to my cousin Erin, who is pregnant and on bed rest.

You can see a bit of the card through the envelope.  It is from a set Zach got for me on our first wedding anniversary (paper) with my name and a bird image.  (He used my maiden name and initial as that is what he calls me.  My first name and maiden name go together very well and are usually said in one run-on breath!)  He also got me a wax stamp, which I used, but as you can see, I dribbled a bit of the wax!

Today marks the 29th day of bed rest, and little Keegan Michael has made it to 37 weeks (technically, full term)!  So my newest second cousin should be arriving any day now.  I can't wait to see Erin and her husband Nick meet their son and grow as parents, and I can't wait to love on that baby.  :)

Erin and Nick have been together since we were in high school and went to the UCA together, where Erin and I were roommates for two years, our roomies helped Nick put together his proposal, and we were all in their wedding, etc. etc. etc.  (Nick proposed on the football field after the homecoming game, and then they got married in front of the school fountain.)  In short, we (Erin, Nick, our roommates, and I) have a long history together.  My cousin was probably my first friend as our dads lived in the same town when we were small, so we were just blocks from each other for a few years.  And after my parents divorced and we moved to another town nearby, Erin and I ended up at the same middle school through high school.

I'm so thankful for my cousin and for all our memories.  And I can't wait to have many more, starting with Mr. Keegan!

Since Erin is six months younger, she just missed the cut-off date and started school a year later.  We were getting slightly less awkward here.

NYE 2006-2007

 This is with our roommate Emily in 2007.  Our other roommate Rose had to have emergency surgery to have her appendix removed and ended up having to withdraw before the spring semester was over.  We took silly pictures with chalk messages on the sidewalk next to our apartment and put together an album for her.  This was the year we started living together and began our "sorority," the Omicron Omicron Omicrons.  That's why we are attempting to make the "O" face.  ;)

Erin's favorite holiday is Halloween, and as her birthday falls shortly after, she and Nick usually host a Halloween party.  This year, they did a murder mystery.  Rose went as a Hollywood glamour gal, I was a peacock, and Erin was a western can-can girl.  We had so much fun trying to capture a photo of our Omicron faces!  (I posted more of our Halloween adventures last year.)

What I Wrote Wednesday

I decided that since I failed last year, I would try to send more cards and letters this year.  Last week, I mailed my dear friend Monica a card.  She just recently had baby Autumn (in November), and I've only gotten to hang with them once since then.  :(  I miss her so much and can't wait to see Autumn (and Rob!) again!  She's already growing so fast, and it's a joy to watch Monica become a mama.  :)  Here's a little trip down memory lane...

Monica and I actually met on Facebook before we met in real life:  Originally, Facebook was just for those enrolled in universities, and Monica was in a few of my classes sophomore year.  I had to miss a few days in October, and I sent a message to a few folks that had added my two literature classes about the assignments I missed.  And we never looked back!

 This is with our dear friend Katie on Monica's birthday in 2007.  We were at the Electric Cowboy, and if you know us, you know that really isn't our kind of place.  *haha*  Senior year, we were a trio; if you saw one, you always saw the other two.  We had so many fun times together (as you can see by this picture)!

For example, here we are at Monica and Katie's graduation in December 2007.  Katie is actually now expecting a baby, and we find out this month if baby J is a boy or girl!

And this was on my graduation day in May 2008.  :)

Zach and I had a joint bachelor/bachelorette party the night before our wedding in 2009.  We went to The Flying Saucer, where we met, with all of our friends.


This was after Zach and I graduated with our Master's degrees in 2010.  We were at The Flying Saucer again with our friend Whitney (who was partially responsible for Zach and my match!).

Photo a Day in November #9 (late)

9.  Small

So one of my best friends from college, Katie (in the middle), officially announced on facebook that she is expecting a baby in June!  (I knew a few weeks ago.  :)  And my other best friend from college, Monica (on the left), is having her baby next week.  (I was also informed about another pregnancy of a friend, but it's not official. ;)  While those are HUGE, life-changing events, the babies themselves are small?  (I'm really stretching this here.)  This is an old picture (like five years old--from their December graduation), but that is what I posted in my daily photo album on facebook, and I figured you guys were tired of pictures of our cats (they are small, too, but depending on your perspective, they can be huge).

We used to be the babies, and now we are having babies!  (Not me--I have cats.)  How did that happen?  We are growing up so fast!

Today I am linking up with Kelly's Corner's Tour of Living Rooms.  I apologize for the poor quality of the photos; they were taken on my iPhone.  ;0)  We are still working on decorating our house, and it is a little cluttered and messy right now, but that is how we live at The Owlery...

My husband always neatly stacks everything up on the coffee table, which drives me crazy because the scrapbook I made him and our wedding photo album can't be seen or be artistically arranged on the table.
I always pile up current bills and letters and books I'm reading underneath, which drives him crazy because he hates clutter.  *lol*  We are a perfect pair.


This is our TV that we got for Valentine's Day for last year.  Our entertainment center used to be an aquarium stand that we repurposed to hold all of our devices.  I think I would like to paint it red or olive green one day...
One of Zach's former bosses built the speakers on each side of the entertainment stand.  Someday, I will figure out what to hang over the TV.  I just feel like anything large and square/rectangular will compete with the TV as well as the picture over the fireplace.

I love that we have a fireplace!  I feel like it is so romantic.  :)  During off months, I would like to buy a set of candles in different sizes to place inside, but right now the natural log suffices.  Our fireplace tool kit doesn't match our screen exactly, but I like that we aren't too matchy-matchy. 

Zach's parents got us the "guest book" frame to use at our reception, which we held three months after our wedding.  Somehow, his dad broke the glass to it, and we still haven't gotten it replaced over two years later.  *lol*  The red glass candleholders were a Christmas gift from my cousin Erin, the smaller frame reads "One of the most beautiful blessings God gave me was you" and was a gift from my mama while I was in the hospital this last time, the HOPE candle holder was won by my mama at BINGO, the mantel clock was a wedding present (I can't remember who I got us it now--sorry!), and the dancing bride and groom came from my mama's house (It was a piece of decor in our home while I was growing up.).  Zach just recently bought the helicopter to terrify our kitties.  ;)

You will notice there are lots of LEGO in our house as I give you the tour.  My husband has been building since he was four when he received his first set; it was the only time my in-law's had seen him sit still up to that point, so they kept buying him bricks!  He now has a whole LEGO room to himself (one of his dreams growing up).  The Star Wars Death Star on his desk is always a big draw.  It's one of the larger sets that has ever been made.
Also, we got this desk at Office Depot for around $60 because it was on sale and we had a coupon.  WOO!
Finally, we are a Mac family.  :)

This is our balcony.  I use those birds there (purchased at Target on clearance) to measure the snow during the summer.  During the winter, these trees are absolutely bare, but during the summer, it becomes a jungle.  We have a few dead plants out there (the soil was infested with gnats, and our techniques to kill them killed the plants) as well as a cute red tiled table we got at World Market.  We are in the process of finding some chairs to match that will fit.  (The balcony is small.)  Zach's mom got me a hummingbird feeder for my birthday, but we still haven't seen any hummingbirds.  :(

When we graduated with our Masters degrees, Zach's parents got us a couch as a graduation gift.  I love our cinnamon settee!  However, I am not as found of the pillows, so I made an envelope case out of beige toile to cover one.  We always fight over the pillows in that Zach likes to have them on when we are both hanging on the couch, and I always like to remove the one from my side.  The white throw is actually a prayer shawl that was made by a local church to honor our wedding, and Zach stole the Christmas throw beneath it from his parents.
Our friend Michelle got us the King and Queen Chess hangings, and we bought the shelf lamp from Target.  There's a candy dish, white chess piece, and London phone booth bank on its shelves.  You can see into the kitchen/dining area through the window opening.

Finally, this is our extensive music collection.  One day we will have an nice and HUGE cabinet in which to store our music.  (You may have noticed more CDs stacked on the glass desk.)  This is another shelf lamp with a picture of Hobie in a frame Zach got me for my 25th birthday (its twin is on the desk), a cloisonné box Zach got in China, an Asian tea set from Zach's sister Erin (for our wedding), and some music DVDs.  The shadow box above our musical collection is most important.  Zach made this and used it in his proposal, which you can read about here.  His butt actually broke the glass in it as well!  I had it leaning against the couch across from these CD shelves so he would know where to hang it, and he came to sort CDs and sat down on it.  And, no, he didn't cut his butt!

MENU MONDAY: Roasted Brussels Sprouts

The last time I had BRUSSELS SPROUTS was in 2003 right after I was released from the hospital following my first flare-up and diagnosis with Crohn's Disease.

I had always been a picky eater growing up. Though not as picky as some--I had a friend who did not try pizza until fourth grade!--I was very picky when it came to vegetables. I stuck to the trusted, kid-friendly ones such as potatoes and corn, but I also liked fried summer vegetables like squash and okra. I loved raw celery and carrots, and I often tried to eat cooked carrots that were boiled, but, of course, the boiling killed all the flavor, and I ended up not eating them. I liked lettuce and onions on my hamburgers (actually I could eat an onion like an apple), and I liked tomato sauce in things.

And I think that was it when it came to vegetables.

In August 2003, I was started on a low-fiber, low residue diet that required I avoid fried, greasy foods, raw fruits and vegetables, seeds and nuts, and other items. Slowly, I was allowed to reintroduce the items--and I only rarely had problems until this flare-up--but, at first, I strictly adhered to it. I was allowed to eat fruits and vegetables, but they had to be cooked. As I had been on TPN (total parenteral nutrition) for three weeks, my taste buds, stomach, and such had changed. I felt I needed to retrain them, and inspired by Genesis 1:29, I decided I needed to try things that I had not liked or thought I disliked previously.

I believe that, on the afternoon I was released, my mama and I had dinner at the hospital cafeteria where I tried sautéed mushrooms for the first time. I didn't like mushrooms before I was sick, and we never had them when I was growing up--which may be why I never liked them!--so I thought I would give them a go. (I didn't like them. I still don't. But I am going to give them another go with this little project.)

Before I get to the BRUSSELS SPROUTS, here a few pictures right before I was diagnosed in 2003. I started having initial symptoms about a year before I was hospitalized, in 2002 (ten years ago!), but in the months leading to my diagnosis, I had more and more trouble and turned more and more pale. One thing I remember is that I had a cyst on my face that would not clear up no matter what I tried. I must admit that I did "photoshop" a few of the photos sometime ago because that wasn't something I wanted to remember...

I had been to see my gastroenterologist by this time and had had a colonoscopy. They only did colonoscopies through her clinic on Thursdays, I believe, and as a senior in high school, my schedule had been crammed those last months of school. I did not have a colonoscopy until the Thursday before we left on this trip though I believe I first saw Dr. Helen Casteel in March; I think this was just two days after. Following my colonoscopy, I had been put on a Prevacid, an antibiotic for H-Pylori, and two other medications I don't recall. I wasn't quite faithful in taking all of my medicine on the trip. I didn't realize how serious my situation was.

We went through Biloxi on our way home to view the damage from recent storms. It was very much changed then, so I can't imagine how it looked after Katrina two years later. (Our family went to Biloxi last May for Erin's wedding, and much has been rebuilt, but you can still see the scars.) I was getting very sick this time; I was running a fever, and my throat was so sore. (I picked up some kind of infection from the ocean, which was made worse by my condition.)

We thought we were getting a picture on the Biloxi sign. After all the trouble it took to climb up there and get Savannah satisfied, we said screw it--we'll take the Gulf Coast!

So I had BRUSSELS SPROUTS for the first time in 2003. In the fall of 2003, I was strictly adhering to my low-fiber, low-residue diet, and I started eating cooked green beans and peas happily. (Well, I wasn't so keen on the peas, but I have started to like them much better of late.) One week I picked up a bag of frozen SPROUTS in a butter sauce. The directions said to steam them in their sauce, so I did. THEY WERE AWFUL! They were mushy and bitter, and I just did not care for the sauce that came with them. I never tried them again.

Until now.

These ROASTED BRUSSELS SPROUTS are amazing! I seriously cannot wait to make them again. They are crunchy on the outside and tender on the inside and salty but slightly sweet. I love them--I could just pop them in my mouth like mini pretzels or kettle chips. They are also adorable. What I previously thought looked like alien brains now look like these charming little cabbages that I could use to play with my American Girl doll Samantha.

And the best thing is that BRUSSELS SPROUTS are cruciferous vegetables (like broccoli or cauliflower), which are some of the healthiest around!

ROASTED BRUSSELS SPROUTS

-Preheat oven to 400 degrees. This is what the stars look like. :)

-Cut off the white stem end from each sprout and remove any yellowed leaves. Then cut each sprout in half. (This makes it easier to roast them as well as eat them.)

-Rinse sprouts well. Here are all of my tiny cabbages split and ready to go!

-Mix together 3 Tablespoons olive oil, 3/4 teaspoon salt and pepper to taste. Then add sprouts and toss to coat well.
I originally felt this was a tad bit too much salt, but they really were seasoned perfectly!

-Place sprouts on a nonstick baking sheet. (I would suggest using one that is not stained or one that is too dark. I think they brown/blacken too quickly otherwise, but I didn't want to stain my nice Wilton ones. *lol*) I started by laying them cut side up. Roast for 35 to 40 minutes. I flipped them halfway through the cooking time, but since they browned on the bottom so quickly, I wish I had flipped them more than once. This may not be the case for your oven/pans...or for mine the next time. :)

Here they are in all their glory! I served them with mashed potatoes and this yummy roast my mama made while she was still visiting this last week. It was such a tasty meal! And I really cannot wait to make them again...maybe next week? ;)

And here are a few more pictures of me with Tasha (and Steph and Brandi). These were taken at Tasha's graduation in May 2004, the spring after I was diagnosed. I was still on prednisone and azathioprine at this time, but I think the prednisone may have been tapered at this point. My face is a little rounder than normal in these photos, but it's really not that bad. (You always think its worse in person and when you are growing through it.) As of now, I am down to ten milligrams a day when I started at 30 (40 back in November). My face is still puffy, but I don't think it is as puffy as it was (moonfaced), and my appetite is more normal. My hair, however, is still doing crazy things. As I was on prednisone for a much longer time and at a higher dosage, my face seemed to gain weight and stayed puffy much longer. I could literally feel when it would puff up after I took my medicine. It was a crazy feeling! My friend Brandi in these photos joked that people would see me driving down the street and think I was much heavier than I was...until I stepped out of the vehicle. (The rest of me was a normal size; only my face swelled although some people's hands and feet also swell.) I could show you some more interesting photos from that time--I seriously look like Gwyneth Paltrow from Shallow Hal in the face--but I have never scanned them onto my computer. Probably because they are so frightening...and I wouldn't want them to pop up on our Apple TV!

And I am not trying to make fun of anyone--I just think I look crazy when my face puffs up but the rest of me is normal (or as normal as I can be! *lol*).
