What I Wrote This Week

Of course, I wrote this stud a little Valentine's message last week.  I'm too private to share even the front of the card, but I have to say that his card to me beat mine by miles.  He MADE his card:  It's a photo card with a picture of us on the front and this sweet message inside.  :)  I took it to work to put on my desk.  It makes my heart melt every time I see it!  I took this photo when testing out my new camera over the weekend.

Tomorrow will be celebrated by two special kiddos:

Three years ago, Mr. Drake Ryder Lockridge was born!  He is the youngest of one of my best friends (Tasha) and baby brother to Briley Renee.  I actually didn't get to be there on the day he was born (unlike Briley, who got me to the hospital at 2 in the morning!) because I had a night grad class, but I made it up there the next day to meet the little man!  It makes me sad that I haven't gotten to watch him grow up like I did with Briley because I was in grad school the first few months of his life before we moved away.  :(  But I am so thankful for this little boy!  He is a BIG blessing (and a handful)!!

I have this photo on our fridge.  :)

Briley was being a little stinker with the icing!

 Drake's First Birthday

 Drake's Second Birthday
This was after I had been sick and was recovering, which is why I have steroid moon-face.  (My hair was super thin, my face was super fat, I had just gotten glasses.  Blurgh.  I cut my hair off that following week!)  We missed 3/4 of the party because we had lunch with Zach's family, then drove two and half hours to visit my sister Amanda who was down from Michigan, and finally made it to Drake's party after driving another hour.  Then we had to drive four back home!  I'm sad we are missing his party this weekend, but I know he will have a great day at Larry's Pizza!  Happy birthday, Mr. Drake!  Aunt Byrdie loves you!

Tomorrow is also Miss Zoe Alexandria's birthday!  Our dear friends Rob (who has been Zach's friend since Zach was, like, fifteen) and Mechelle (who is actually Tasha's Aunt Tay's best friend) adopted these kiddos last year after much prayer and problems over the past few years.  They have been HUGE blessings to all who meet them, and I'm thankful we will probably get to see them next month at the LEGO meeting.  :)

Zoe with the throne she built during the LEGO club meeting
Happy birthday, Zoe!  We are thankful you are in our lives!

Until we can see these kiddos, I'm sending them some cute cards to tide them over.  :)  I love the kids cards at Target--they are so colorful!

Be Grateful #6

What a fantastic week!  It definitely had its ups and downs, but overall, this week was GREAT!

1)  I'm thankful I survived week two of my new job.  I'm starting to feel like I'm figuring things out...even if my first faculty training didn't go as well as I had hoped.  *lol*

2)  I'm thankful that I work at such a fabulous place!  The dean of our division was so concerned with our safety, he had Emergency Management and Risk organize a shooter simulation for us to prepare.  I don't think it went as well as it could, but the important thing is, is it got us to start thinking about what we would do in dangerous situations.

3)  I'm thankful I'm enjoying teaching Intermediate more and more all of the time.  I do wish I had more time and energy to strengthen the relationship with my Composition I class, but I think that will come in time.

4)  I'm thankful I survived my colonoscopy!  While the day before really stunk, I was actually quite coherent after my procedure and really enjoyed the loopy feeling.  *haha*  I got my the results on Friday:  I quote, "Biopsies showed quiescent crohns colitis changes.  NO DYSPLASIA . . . The small polyp was benign and not precancerous!"  WONDERFUL NEWS!  Praise the Lord!  And as my husband said, we learned new words, too.  Thanks for all of your good thoughts and prayers.  :)

5)  I'm thankful my Martha Stewart Living magazine subscription finally started back.

6)  I'm thankful we got to eat so many yummy things this week:  Sour Patch Kids popsicles (those saved me on bowel prep day!), Nutella croissants, KFC, potato soup, Flying Fish, veggies, roast chicken and baked potatoes, Gusano's pizza, and caesar salads!  And today, we are going to Fred's Hickory Inn for our Valentine's Day brunch!

7)  Speaking of Valentine's Day, I'm so thankful for my wonderful husband!  He is THE BEST, hands down.  We started the day with chocolate pancakes (imprinted with a heart) and strawberries.  At work, I got a goody cup from one of my new co-workers, and after work, Zach surprised me with a box of chocolates made by the culinary department AND Starbucks hot chocolate.  Then we came home, made dinner, and opened presents.  I got him a LEGO book, Jelly Belly Cinnamon Bears, and some pilsner glasses; LEGO, candy, and beer are some of his favorites, so I think I did well.  BUUUUT he did way better than me!  I GOT A CAMERA!  Just like I suspected!  ;)  Zach went ahead and gave me my birthday present early:  a Canon Rebel T3i!!!  He did so great, and most importantly, he saved me the stress of trying to find the "perfect" camera.  :)  I can't wait to finally get to use it today!  (I was behind on lots of things, but have caught up mostly, so now I can play.)  Today, we are exchanging cards--since his to me hadn't come in yet--and going for a walk to use my camera.  Don't you just love LOVE!?

8)  I'm thankful I'll get my permanent crown on Monday.

9)  I'm thankful I got a TON of work done yesterday.  Overall, I was pleased with my students' reflection papers.  Most of them developed their topics well and described them in a balanced combination of sensory details and engaging emotions.  I was very happy to see that not too many of them used fragments although they did forget commas with coordinating conjunctions and had far too many comma splices.  You win some, you lose some.

10)  I'm thankful we have so many friends from work and so many friends in the area now.  We had to go to the Jam Night because of Zach's new position, and I was so tired I was sure we wouldn't have much fun.  But it was a BLAST!  And that is thanks to the wonderful company we had.  :)

11)  Although I was sad we didn't get a snow day, I am thankful I got to see a little snow fall.  There's always this week...

WHAT ARE YOU LOOKING FORWARD TO THIS WEEK?

What I Wrote This Week

Instead of mailing something, I actually sent something digitally this time around.

Arkansas Children's Hospital is asking for Valentine's for their patients.  The goal is for each patient to receive 10 Valentine's Day cards.  This is a GREAT hospital; it was always where my family took me when I was really ill, it was the hospital my primary physician would always refer us to (and not just because it is a children's hospital), and this is where I was diagnosed with Crohn's and put in remission for several years.

I tried to add a punny little message with each one I sent.  For example, with the Honey Bee one, I added a tongue twister:  Buzy buzzing bumble bees buzz busily below the beehive.  It was a lot of fun, especially knowing how nice it was to receive little "happy's" while I was in the hospital.  To send your own Valentine's, visit here.

How are you spreading the love this year?  I can't wait for our little celebrations this week!

Be Grateful #5

If you thought last week was crazy, this week was crazy x infinity.  Whoop.  I am tired.

This is a series of photos from our celebration at Mimi's Cafe.  We never got a great picture, but I enjoy these.  :)  The food was amazing (though I didn't care for their mojito and they ran out of chocolate mousse), and our waitress even gave us free muffins!

I started my new job this week as well as continuing on with my three classes.  I am hoping that I will get back to posting sooner in the week rather than later although it may be better to move this to the weekend when I have more time to write.  *lol*  I've been working until six or seven each night to make up my hours in the classroom.  A stomachache also took over one night, so basically, I've been getting home, grabbing something quick to eat, and going to bed.  Here is a quick run-down of things I'm thankful for:

1)  I am thankful for my new job.  It has kept me busy but in a good way.  I feel like I am going to be making a valued contribution.  It's not that I didn't feel that way before, but now it feels even stronger.  I'm still getting my feet wet and imagine I will be over the next few months; I think I'm going to keeell eet.

2)  I'm thankful for my husband who refuses to take things lying down.  I'm also thankful he helps me and pushes me to get stuff done when I doooooooon't waaaaaaaaaaant toooooooooooo.  *cue whininess*

3)  I'm thankful I didn't kill a co-worked on my first day.  I brought a banana for lunch, and he's allergic.  Thankfully, things were so busy that I didn't have time to eat it!

4)  I'm thankful for how shocked and stunned and somewhat outraged my students were when I told them I was leaving.  They know how to make a girl feel special!  And I'm thankful that they are likely going to like the new instructor at least as much as me if not more.  (She has a nose ring and red streaks in her hair.  In short, she is COOL.)  Hopefully, this transition will be easy and smooth.

5)  I'm thankful that old students feel like they can reach out to me when they have an issue or question.

6)  I'm thankful for the support I've received from everyone at work, whether they were involved in my old position(s)  or are part of my new one(s).

7)  I'm thankful we got to celebrate my new job and his new job last weekend and that this weekend we enjoyed a fantastic lunch with friends and a night out at Crystal Bridges for the Black Hearts Ball.

At the Black Hearts Ball, they had funny conversational hearts around the entrance and cafe.  Zach took this one of the wall and tried to pin it to me because of my new job.  He hopes to Photoshop in an "S" before "HE" before I share it on Facebook.  *lol*  They also did a scavenger hunt based on whether or not you were single or taken for one free drink.  We were given clues about an artwork, and when we found the artwork in the gallery, there was a box with coasters for a free drinky drink.  :)

8)  I'm thankful for fun money!  And having a new job means more fun money.  Yes, sometimes I'm shallow, but I want to go shopping.  ;)

9)  I'm thankful Valentine's Day is this week and that we are going to Fred's Hickory Inn this next weekend for brunch to celebrate it.  I have part of Zach's gift, which he already knows about, but I am waiting for another part to come in.  He gave me sheets last month; they were part of my Valentine's, but he was afraid I wouldn't like them and/or would be disappointed on the holiday, so he gave them early.  Zach is giving me my birthday present this week because HE CAN'T WAIT!  I think I know what it is (as mentioned before).  I'm going to go ahead and offer a little something-something here to show him I can guess presents as well as he does.  *haha*  Here is a riddle to figure it out:
What sees, but never is in sight, closes but is never shut?

10)  I'm thankful that my colonoscopy is tomorrow and that I'll be eating some Flying Fish at some point.  Fingers crossed that all is well in Tummy Town!  It's not much of an extra day in the weekend, but I am going to make the evening--after I wake up and am feeling better--count!

11)  And I almost forgot:  I am thankful that Keegan arrived on January 30 at 9:15 p.m.  He was 7 lb. 2 oz. and 19 inches long.  I can't believe I forgot him!  It's probably because I haven't had a chance to see him yet and take pictures.  :(  BUT I am enjoying all of the ones I see on Facebook!  He is a beautiful baby!!

I'm loving...

Wow!  Yesterday's post was my 200th!  That's crazy to consider.  Of course, I started this little ole' blog back in December 2010 after we moved to the far side of Arkansas, so it's about time I rolled past 200.  *lol*  I'm doing better about chronicling our life here, but I hope to do even better this year.  :)

This week, I'm loving:

I got two bags of these on clearance after Christmas, and I finished the second bag today.  *shame face*

This season has been emotionally turbulent and honest.  Ah, I can't hardly take it...especially that there are only TWO more episodes...

Zach got these for me for Valentine's Day, but he was afraid I would be disappointed--I'm not sure if he was worried getting sheets would be disappointing or if these specific sheets would disappoint me--BUT I LOVE THEM!  They have brightened up the room and feel so regal.  :)

I've been walking for at least 30 minutes a day except for Monday when I worked A-L-L day.  I've been adding a few extra minutes each day to make up for it.

While we have watched the available seasons, I still find these books to be so surprising and freshly written.

I've been enjoying poofing my hair...

...because when I wake up after sleeping on the slightest of damp hair, it looks like this.  *HAHA*

Cheetos Puffs.  'Nuf said.

I'm compulsive about watching ALL of a show.  Back in the day when there was still a George and an Izzy, I used to watch this religiously with some of my college friends.  But then it started getting a bit out there and too soapy dramatic (as in a soap opera).  However, when I was recovering, I watched sooo much TV and started catching up on shows I watched for a time but quit.  I know what happens at the end of this season (leading into the current one), but I am interested to see it play out.

I used part of my Christmas money to buy some costume jewelry from JCP and Charming Charlie.  I got the loveliest Twenties-inspired necklaces in emerald, sapphire, and rose quartz colored gems.  Since I've always been drawn to silver, I've always had plenty of them, but lately, I've been wanting some gold.  My mama also got me this darling peacock pin that doubles as a pendant from Hobby Lobby (their Timeline by Bead Treasures line--it was a 20s/30s piece :).

Be Grateful #1

Well, we have returned to the daily hustle and bustle of everyday living.  My classes start in one week! I am halfway ready and halfway prepared.  I've worked on various things but haven't completed any.  I am still dreaming of the holidays, and it doesn't help that we haven't had time to take down our decorations yet.  (It's happening this week!  We have a kitty tower to put up...)  It also doesn't help that I have bronchitis (sorta), finished my antibiotics yesterday, and still have drainage issues with a cough that comes and goes.  I'm just praying it doesn't turn into pneumonia.  I have toooooooo much to do!

Zach, Will, me, Matt, Lexi, and Mama
Will had to dress up as Phil Robertson (from Duck Dynasty) for church for some reason.  (I didn't ask.) That's why he is wearing all camo; usually, he is dressed to play football!
Also, I didn't get to fix my hair that morning, so it is WILD!

1)  I'm thankful we got to spend lots of time with family this weekend, even if it meant being away from home another weekend.  Saturday, we travelled to Batesville for the Pharr family Christmas with all of Zach's aunts and uncles and cousins.  I don't know some of them as well because they do live far away, and additionally, we have missed the last three gatherings in four years because of various reasons.  But Zach and I spent the night with his aunt Brenda and uncle Davey, so we could travel to Lonoke the next day; that allotted us an opportunity to visit just with them (as well as his cousin Lindsey and his uncle Chuck, both who also stayed since they live in our part of the state).  I didn't get any pictures, including the traditional full family shot, because I know lots of cameras were clicking, and they will eventually be sent to us.  On Sunday morning, we drove down to Lonoke to have Christmas with mama, brother, niece, and nephew finally.  (We had to head back home early at Christmas because of the snow and missed seeing them.)  We all had a lovely time over lunch, opening presents, and watching part of The Walking Dead.  *haha*  I'm so thankful God has seen that old wounds have been healed and that broken relationships have been mended.

2)  I'm thankful I've only gotten almost bronchitis.  (The doctor said it looked as if my body is trying to get it, but it's not full blown bronchitis yet.  At least it wasn't full blown last Thursday...)

3)  On that note, I'm thankful I can work from home when I feel cruddy.

4)  I'm thankful for my husband.  Very few things make my heart sing as when he turns to me in the car randomly and says, "I'm glad you're my wife."  He is my best friend, my champion, my lover.  We both understand that when we got married, we also married into each other's family, and I am thankful for that understanding and for the love we have for each other's relatives.

5)  I'm thankful for the new gold sheets Zach surprised me with!  He got them for Valentine's Day, but he was worried I wouldn't be pleased with them and didn't want me to be disappointed on the holiday, so he gave them to me early.  :)

6)  And it may be silly, but I am thankful Downton Abbey has started again.  Who's with me???

7)  I'm thankful for the good evaluations my students gave me.  Yes, it is nice to have my self-esteem and ego boosted, but mostly, I am happy to see that they are learning and enjoying my classes, even when they find them challenging.

8)  I'm thankful I got approved for the Remistart Extended Access program for this year.  This will help with our out-of-pocket costs for my Remicade treatments, which I have every other month; the medicine itself costs around $3,000 in Arkansas, which means it is worth $18,000 for the year.  We don't have to pay anywhere close to that amount because our insurance is GOOD, but since I still only work part-time, it does help to have some assistance.

9)  I'm thankful for randomly cheap raspberries at Sam's, so we can have raspberry chocolate chip ice cream.  As well as raspberries stuffed with white chocolate chips.  :)

10)  I'm thankful it's a new year with fresh opportunities and second chances to become a better me.  I feel a bit silly, but I am taping this (somewhat altered from the original in The Help) next to my bathroom mirror:  "You are kind.  You are smart.  You are beautiful.  You are important.  You are loved."  Because we all are.  :)

How is your New Year going thus far?

Our Love Story

I saw this on someone else's blog today and thought it looked like fun. (Sorry for the long answers!)

1. How long have you and your significant other been together?

Zach and I have been together a little over three years (dating, engagement, and marriage)--married for most of that. When you meet the one, you know!

2. How did you meet? {What’s your “love” story?}

WE MET AT A BAR!!! I know, I know, those types of situations usually do NOT work out! We met at The Flying Saucer on September 19, 2008. He was there with a friend he had made in grad school who had been in the same program as me as an undergrad, Brian (who had told Zach on the way that he would get along with me). Brian and his girlfriend Whitney, who was also an English major and grad, had no plans to play matchmakers...yet. ;) What is also funny about this situation is that one of my best friends (who was also an English major in undergrad and also in Brian and Zach's program), Katie, had told me she had met my personality soul mate during the first week of grad school after they had completed the Meyers-Briggs personality test. She said that every time my soul mate would raise his hand and say something in class, she couldn't help but think of me! (Zach is an INTJ, and I am an INFJ, which is why we are personality soul mates.) At the Saucer, we were sitting one person apart at the table, and when this guy left, we started talking one-on-one about grad school and the music, movies, and books we liked including Carroll's Alice's Adventures in Wonderland. Whitney said she had never seen me talk for so long to one person, especially a guy. (If you know me, this is sooo true.) We talked the whole night! When I was getting ready to leave, I went around the table to hug everyone. However, when I got to Zach, I didn't know what to do: say goodbye, shake his hand, or awkwardly hug him? I settled on awkwardly hugging him--I didn't want to leave him out!--and we ended up doing this weird, half-side hug. He had whispered to me earlier, and I quote, "It is very sexy the way you carry yourself." So bold, this guy was! I thought this was just something a guy in a bar would say to a girl, but if you know Zach, this is not something he would EVER do. *lol* (Usually, when he says the word "sexy," he half-sings it in this silly voice. But, of course, he wasn't just complimenting the way I looked, but my personality, intelligence, etc. so he said it in a serious tone then.) After I hugged him, he said that he was serious about what he said (See!) and hoped to see me again. So I told him I would look him up on Facebook. Well, the thing is things aren't always spelled the way they are pronounced. I got home and looked up "Zach Farr," who did not exist. I thought Zach was just another jerk in the bar after that! Only when he added me did I realize he is a "Pharr." We had some more funnies that happened leading up to our first date date, too...

3. If married, how long have you been married?

We were married on September 19, 2009, exactly one year after we met! So we have been married over two years.

4. If you are married, where did you get married? Big or small wedding?

We had a small Alice-in-Wonderland-themed wedding at Faulkner County Library (60-ish people). We had a reception at a former magic theater on December 20th for an even smaller group. (We would have had in on December 19th, but Zach was in a wedding that day!)

5. Do you have any nick-names that you call one another? Do share!

Wooky and Pooks--they have evolved from rather common nicknames that we were initially using ironically. I guess the joke is on us! We have more than those, but we use them for a time and then discard them before picking them back up; Zach is constantly singing new nicknames at me like Ladyface. I have also tried on and off since I met Zach to give him the nickname Zaxby (like the chicken restaurant) because he is slightly allergic to chicken. These are probably the most interesting...

6. Name 3 things you love most about your honey.

a) He can always make me laugh.
b) He is thoughtful of everyone in his life, which means everyone in my life, too.
c) He is so hardworking for our family.
BONUS: HE'S A CLEAN FREAK AND DOES ALL THE VACUUMING, THANK YOU LORD!

7. Tell us how he proposed?

I just wrote out this story for a contest, but I will keep it short and sweet. Zach proposed to me in Kansas City on July 19, 2009. We were supposed to be having a cheap trip since school was out and we weren't working, but after dinner at The Cheesecake Factory, he told me he had a surprise: we were going on a carriage ride! Around The Country Club Plaza! At sunset! Of course, the first thing I ask is how is he affording this. *lol* After the ride was over, I thought we were heading back to our friends', where we were staying, but he said he had another surprise around the corner. He pulled into the parking lot of Southmoreland on the Plaza, a B&B! He told me we were staying there for two nights, and I immediately asked about our luggage. (Our friends were in on the surprise and had brought it for us.) So we went inside and were led to our room. The key was given to me to open the door, and when I did, I was met with champagne and a "Drink Me" sign and chocolate-covered strawberries with an "Eat Me" sign. I thought the B&B had supplied them! After all, they had sherry in the rooms and appetizers every afternoon! Well, it took me a moment to realize there was an "Open Me" sign on a tiny door to the left. When I did open it, I found a shadowbox filled with photos and souvenirs and topped with a "Love Me" sign. I noticed there was another sign behind it--"Marry Me!" (I still thought the food came from the innkeepers at this point and hadn't made the Wonderland connection!) I was waiting for Zach to speak, but finally he blurted out, "Please say YES!" That boy was sweating bullets even though he knew I would say yes! So we hugged and kissed, and he told me there was a surprise under that sign: a diamond solitaire ring that shines like a snowflake! We spent the night sipping champagne on the balcony, planning our wedding and our future (I asked such practical questions as, "Where will we live?" "What will we do?" "How many kids should we have?" "What about our money?" Poor Zach!), and calling family and friends to let them know.

8. Is he a flowers and teddy bear kind of guy for v-day, or strawberries, champagne, and rose petals?

Zach tends to give very personal, thoughtful gifts for Valentine's Day, so I guess I would say he's a rose petal guy.

9. Are you a sunset dinner on the beach kind of girl, or pop a movie in and relax on the couch?

Well, I'm not a beachy gal, but I do like the idea of a sunset dinner! However, we started dating with "movie and waffle" nights at his apartment because we were poor grad students, and he worked for res life as a hall director and was always on duty. So I have some fond movie-and-snuggling memories...

10. Tell us one thing you’d like to do with your significant other one day. If you could do anything? Go anywhere?

We ARE going to England next summer! We've both been, but we haven't been together. We are thinking a week to a week and a half in a holiday cottage in the Lake District, and then a week to week and a half in Edinburgh, Scotland!

11. Tell us what you plan on doing on this Valentine’s Day?

Well, we haven't made definite plans. We found out we owe taxes this year, which has forced us to change our budget after struggling to pay off my medical bills and buy a new car because Zach's transmission went out; we were planning to go to Eureka Springs and stay, but it's probably not in the budget now. :( I told Zach, though, I was happy just staying at home since I missed it for a month! And since I didn't get to bake for Christmas, I've had lots of plans for this holiday. I've already made heart-shaped gingerbread cookies with pink cream cheese icing, and I plan to make a strawberry lemonade cake and heart-shaped cinnamon rolls for Valentine's Day. I may make some Neapolitan cupcakes (chocolate and strawberry layers with vanilla icing) for this weekend!

12. Are you asking for anything this Valentine’s day?

No, we never ask each other for anything. It's always a surprise!

13. Give us one piece of advice of keeping a relationship strong and full of love.

Respect each other.

14. Show us a picture of what love means to you.

And just for kicks: the most recent photo of us from Le Chocolate Feast on January 28! It was an event raising money for breast cancer awareness, and participants got to sample chocolatey treats for over a dozen vendors from NWA. It was SA-WEET!!!

(Sorry my face is still puffy--thanks, prednisone!)

"Baby, You Can Drive My Car..."

our 2012 triathlon grey Hyundai Veloster that we got the last week of December
The big news today is that I went driving for the first time since November 15 or so. :)
I didn't drive our new car though; Zach takes that baby to work; I drove MY car.
It's definitely not something you forget how to do.
I enjoyed being able to get out on my own. My mama came with me to help in any way I needed, so that was nice.
I even popped into Hobby Lobby to look at the little Christmas clearance they had left, and I found part of Zach's Valentine's gift AND I used a 40% off coupon.
(I'm buying presents EARLY this year!)
Then we went to Walmart, where I actually got some (more) Christmas clearance: two stocking holders for $1.50, boxes of candy canes at 24 cents each, Pepperidge Farm cookies at 69 cents each, and Febreeze at 62 cents each. Yeah, baby.
(Zach has sent me back tomorrow for more cookies and Febreeze. Priorities, people.;)

Menu Monday: BLUEBERRY-STUFFED SCONES

I may have mentioned this before, but we really love eating breakfast for dinner around here. For example, Saturday night I made buttermilk waffles with buttermilk syrup (thanks to the ladies at The Pretty Life Anonymous) and turkey bacon. Breakfast foods are filling and cheap and are sooo enjoyable to eat. Besides, who has time to eat a nice big breakfast in the morning? Mornings are hectic around here; we are lucky to eat at all (but Zach and I both do). We also like to have breakfast as a quick fix for dinner or an easy meal to make when we are busy or are preparing to travel, as we are this week. We are going to Brickworld outside of Chicago because my husband loves Lego, and I love my husband. ;) (Plus it's going to be pretty awesome AND our friends Rob and Mechelle are going. I really am excited; I promise. I just think Mechelle and I are more excited for Giordano's pizza. ;)

Since Zach and I have met, we have shared plenty of scones. I have made some from mixes--the best ones bought at World Market on trips to KC--and I have tried several recipes. I made one using sour cream and orange zest the first summer we were together, and I remember we liked that one quite a bit although it was crumbly. The one I used on the morning of the Royal Wedding? Not so much. Tonight, however, I am happy to say I have found a scone recipe we both like, even though the scones it makes are somewhat different from the ones to which we are accustomed. By that, I mean that the fruit is an actual filling as in a fried pie or dumpling, rather than being mixed into the batter. I had quite a bit of buttermilk leftover from "brinner" this weekend, so I wanted a recipe that would use some of it up. Fortunately, I found a recipe in the cookbook that Zach bought me for our first Valentine's Day together. WIN!

We bought some more blueberries at the Farmers Market, so BLUEBERRY-STUFFED SCONES were born!
-Combine 1/2 c. all-purpose flour, 1/6 c. sugar, 1/2 tsp. salt, 1-1/4 tsp. baking powder, and 1/4 tsp. baking soda in a bowl.

-Add 6 Tbsp. butter or margarine and mix until the flour mixture becomes crumbly. (I used my KitchenAid [of course!] on the 2 setting.)

-Add the 1/2 c. buttermilk until combined. It will be very sticky.

-On a floured surface, tear off 2-in. diameter portions from the dough and roll the dough out into circles that are about 4 inches in diameter. (I suggest flouring the surface and rolling pin in between each circle, and it doesn't hurt to flour your hands, too!)

-Place 7-10 blueberries in the center. (You can use any kind of fruit, jam, baking chips, cheese, nuts, or what have you. Use your imagination. :)

-Fold the circle in half and seal edge. Place on a greased baking sheet and brush the top of the scones with heavy whipping cream. (I used Baking Joy every time I need to grease a pan or what-not for baking. My mama always used Crisco, and while that softens your hands, it sure is messy!)
-Bake for 15 minutes until lightly browned at 400 degrees.

-Sprinkle with powdered sugar while warm. (I wish I had used my sifter. They would have been that much prettier!)

[10-12 scones]

P.S.S. We are going to be gone until Monday, so no posts until next Tuesday at the earliest. The only food I will be talking about will probably be Chicago-style pizza and hot dogs!! I'm sooo excited about them.
P.S.S.S. I had radishes again this week in salad Sunday night. They are so nice and peppery. But can you cook them? I need to research that.
P.S.S.S.S. Someday, I promise, I will have a lovely camera that takes lovely pictures. Right now my iPhone will have to suffice. : /
